Ludy87 05638b9591 Upgrade Gradle to 9.6.1
Updates Gradle version from 9.6.0 to 9.6.1 across all GitHub workflows, Docker build images, and gradle wrapper configuration. This includes updating the gradle Docker image SHA256 hash and all references in CI/CD pipelines.
